My dinner review

Tonight I decided to try 2 new recipes for dinner. Cheesy Squash Casserole and Parmesan-crusted Boneless Pork Chops. The casserole was pretty good! I'm still not sure how I feel about the pork chops though. They weren't bad, but they were lacking something. I will probably change up the recipe a bit next time. This dinner was not lower in fat or calories at all like I usually try to do, it was more of a treat for my husband lol.

Here is my very PLAIN presentation! Hey... I was very rushed this evening trying to prepare it while I had a cranky 2 month old who wanted to nurse. I might try a different squash casserole recipe next time, although this one was pretty good.

Cheesy Squash Casserole

6 medium squash thinly sliced
1 onion thinly sliced
1 1/2 cups of shredded Cheddar cheese
1 cup of Parmesan cheese
1 cup of light sour cream
olive oil
salt and pepper
Optional: Ritz crackers

preheat oven to 350 degrees. Grease a medium size baking dish.

Saute squash and onion with a little olive oil. Once the onion and squash is cooked mix it in a large bowl with the cheddar and parmesan cheese and the sour cream. Salt and pepper to taste. put into baking dish and sprinkle crumbled Ritz crackers over the top if desired. Bake for 20 minutes.

I still need to improve the Parmesan-crusted Pork Chop recipe so I am not going to post that one yet.
