What's for dinner?

I think I'll be making my ghetto Beef Strogonoff with green beans on the side for dinner tonight since Tony will be home a bit late. It's "ghetto" because it's more comparable to hamburger helper than it is to real Beef Strogonoff lol. It's tastes really good though, unlike Hamburger Helper!

It's easy and fast.

lean ground Beef
brown gravy
light sour cream
light egg noodles

I cook the ground beef in a large skillet, season it with sea salt, fresh ground pepper, onion powder and garlic powder. When the beef is cooked I mix in the water and brown gravy mix and let it come to a boil and then I lower to heat the simmer. While it simmers I add about half a cup of light sour cream. I let it simmer for around 20 minutes while the egg noodles cook.

I serve the egg noodles with the beef and gravy on top.

I prefer to make healthier meals, but this is an occasional fall back meal when I'm short on time and I can make a lot of it cheap for our big family.
Tomorrow will be Parmesan-crusted boneless pork chops and squash casserole! I'm looking forward to making that :).
